Is there anything fundamentally wrong with attaching my snubber to the bobstay chainplate just above the waterline (assuming the chainplate is strong enough)?

Been done before
 
I used this arrangement on a 40' heavy displacement cutter with bowsprit. Substantial bobstay and chainplate of course but had a rode nylon spring permanently attached. Worked well. Lowered the pull by 4' or so. No problems.

Hello,
Better still would be to run the snubber through a block on the end of the bowsprit. The longer lever arm will be much better at keeping the boat from yawing, as well as pitching, than an attachment at the stem. It will also be far easier to attach and detach, and you won't have a piece of rope permanently hanging on your stem. Both versions keep the rode clear of the bobstay.
